I found a nice detailed shot of the painting in Adama's quarters, above his sofa. I believe that in the season 1 episode, Bastille Day, Baltar noted the name of the artist, or the title of the painting.
Yeah, it represents some type of "last stand" battle between the colonials and the cylons in the previous war. So, the relationship to the Alamo seems apt.
